Sauce with Codfish

Sauce made from cubes of high-quality salted Atlantic cod, soaked in water to soften it while preserving the pleasant firmness typical of the product. The cube cod, skin off, is cooked in extra virgin olive oil and herbs. It can be served as it is with polenta, whipped up in planetary mixer to add to crostini or grilled polenta. Great to make pasta dishes.
