Wild garlic is a spontaneous herb that blooms in spring in humid, shady areas. It is widely used in cooking and is very beneficial, having purifying, antiseptic and draining properties. Every part of wild garlic resembles common garlic in terms of flavour and smell, but it has a fresher, more herbaceous, less lingering flavour. High-pressure treatment makes this particular pesto fresh and tasty, with hard cheese deliberately added to enhance and enrich its flavour. Excellent for seasoning pastas and risottos, it also goes well with fish and seafood dishes. Ideal for seasoning contemporary pizzas, to which it is added after cooking. Excellent for flavouring bread, pizza and potato dumplings.
