Fine seafood salad made with squid, octopus, prawns and cuttlefish in a light brine made from water and vinegar. The neat-cut seafood is firm yet soft with a non-stringy consistency. The colour is light and natural, and the flavour delicate. It is excellent served as a dish in itself, after draining and seasoning lightly to taste, or accompanied with vegetables or dressings based on Menù sauces for more creative salads.
